Pi Day

Matt remembered on March 14th that it was "Pi Day." So, we did our best to make a gluten free pie. We found a recipe online for a pie crust using Bob's Red Mill Gluten Free All Purpose Flour. It turned out pretty well. We only had canned peaches and Ocean Spray whole cranberry sauce, so that's what we used for filling, with some sugar and a bunch of cornstarch--we found a recipe online and modified it to fit our fruit options. I haven't had pie in at least 8 years, so I loved it. I think we'll do it again! Here are the before and after shots. Like the slits I made? :)

Wow, eight years without pie? I'm so glad you found a recipe you could eat that also tasted good.

And now I want pie...

Nice! It looks great, and I'm glad to hear that other people celebrate pi day. Instead of a fruit pie though, I just decided to make chicken pot pie for dinner.
